Ingredients

  • 13 oz fettuccine
  • 5 rashers bacon
  • ½ cup cream
  • 1 diced red bell pepper
  • 4 chopped scallions
  • 1 can creamed sweetcorn (optional)
  • 1 grated Parmesan cheese

Method

  1. Boil a pot of water and cook the fettuccine as directed. Drain and set aside.
  2. Chop the bacon into bite sized pieces. Heat a pan and fry the bacon gently. Stir in the corn if using. Add the peppers along with the cream. Simmer for a few minutes (about 5 minutes). Add the scallions and some grated parmesan. Stir to combine. Now tip the boiled fettuccine to the pan.
  3. Mix well and grab a plate, serve and eat.
