Apple Sauce for Andy's Fairfield Granola

Asked by Novice1403. Answered on 4th August 2013

Full question

Hi, I am based in London. I watched Nigella make Andy's Fairfield Granola on her show and I have also the book. I'm a huge fan of course! But in the show Nigella holds up this big jar of apple sauce. I went looking for it today at Whole Foods, but the only apple sauce they have is in small jars and it is more for dipping and eating with meats. I think that the big jar that Nigella holds up in the show looks more like the big jars of apple puree. Can I use apple puree for this granola recipe? Is apple puree what I need for this? Thank you so much, Grace.

Our answer

The apple sauce used by Nigella in Andy's Fairfield Granola (from Feast) is the apple puree sold in jars. The term may vary a bit and it may be labelled as apple sauce, apple puree or even strained apples. However generally it is the same thing - cooked and pureed apples which are only very sightly sweetened. Sometimes in the UK it is also labelled as Bramley apple sauce.

The sauce is usually served with meats (generally pork) and so will be most likely be found in the condiments section of the supermarket, along with mustard, mint sauce and redcurrant jelly. There are some brands available in the UK (such as Coleman's) and most UK supermarkets also have their own label version. If you are in central London then we would suggest trying Waitrose, Sainsbury's or Tesco.

The recipe uses 175g (2/3 cup) and the jars vary in size from 180g to 280g, so you don't need a big jar for the recipe. Apple sauce/puree is sometimes also sold in the baby food section and this may be the very small jars that you have found. It would also be fine to use this type of apple sauce, though it can be slightly thinner in consistency. You could also use a home-made apple puree.
