Alternative Meat For Vietnamese Noodle Soup

I love the Vietnamese Pork Noodle Soup. Unfortunately I now find it difficult to find organic pork loin in my area and I struggle with the idea of eating factory farmed pork. This may seem ridiculous to ask considering the title of recipe, but what would be a good substitute for pork considering the flavours in this soup? Thank you.

Nigella's Vietnamese Pork Noodle Soup (from KITCHEN) is a quick to make noodle soup that uses marinated pork fillet (or loin), noodles, vegetables and chillies. As the soup uses chicken stock we suspect that chicken would be the best alternative to pork. Also chicken does not have an assertive flavour and will be suitable for the flavours of the marinade.

In this particular case skinless, boneless chicken breast fillets would work well as they are lean and tender, though you could use skinless, boneless chicken thighs if you prefer. Cut the chicken breast crossways into thin slices and then cut these slices into fine strips. The weight of chicken and the marinating time will be the same as for the pork.
