The Chicken Teriyaki sounds delicious! What kind of soy sauce do you use?
Nigella's Chicken Teriyaki (from KITCHEN) marinates chicken pieces in a mixture of soy sauce, ginger, mirin, sake and sugar. The same ingredients are used to make a sticky salty-sweet sauce after the chicken has been cooked.
Nigella uses dark soy sauce for the teriyaki and doesn't have a favourite brand. Light soy sauce and reduced sodium soy sauce don't quite have the depth of flavour needed, but you can reduce the quantity of soy sauce used following the guidelines given in the introduction to the recipe.
