This bread is wonderfully moist and keeps like that for many days! Beautiful in plain slices or warmed under the grill with some butter spread on.

Ingredients

Serves: Makes 8 slices

Metric Cups
  • 100 grams butter (or oil)
  • 100 grams brown sugar
  • 1 egg
  • 450 grams bananas (mashed)
  • 45 millilitres natural yoghurt
  • 5 millilitres vanilla essence
  • 225 grams flour
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 100 grams raisins
  • 40 grams walnuts (chopped, or pecans)
  • 3½ ounces butter (or oil)
  • 3½ ounces brown sugar
  • 1 egg
  • 15⅞ ounces bananas (mashed)
  • 2 fluid ounce natural yoghurt
  • fluid ounce vanilla essence
  • 7⅞ ounces flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 3½ ounces raisins
  • 1⅖ ounces walnuts (chopped, or pecans)

Method

  • Preheat oven to 180C/350F/gas 4.
  • Grease and line a loaf tin.
  • Beat the butter/oil and sugar together until creamy and then add the egg and continue beating until smooth.
  • Add the mashed bananas, yoghurt and vanilla essence. Sift together flour, bicarb, cinnamon and salt and beat this gradually into the banana mix.
  • Finally stir in the raisins and chopped nuts(if using). Bake for about an hour until a cocktail stick inserted comes out clean.
