Metric Cups
  • 2 egg whites (lightly beaten)
  • 340 grams sweet potatoes (mashed)
  • 2 spring onions (chopped)
  • 1½ teaspoons curry powder
  • 3 pinches of ground cumin
  • salt
  • pepper
  • groundnut oil

  • 2 scallions (chopped)
  • 1½ teaspoons curry powder

  • peanut oil

Method

  • Combine everything in a bowl except the groundnut oil, adding the egg whites last.
  • Heat a frying pan or a griddle, rubbed with a little groundnut oil, and dollop the mixture onto it. Of course the bigger the pancake, the longer they will take to cook, so make them little and neat.
  • Squash them down a little with a spatula once they're in the pan.
  • Cook for 5 minutes each side on a medium heat, and then flip them over to cook the first side for a further 2 mins.
  • Serve and enjoy.
