Metric Cups
  • 100 grams butter
  • 225 grams caster sugar
  • 3 eggs
  • 50 grams spelt flour
  • 50 grams self-raising flour
  • 130 grams polenta
  • 50 grams ground almonds
  • 80 grams greek yoghurt (full-fat)
  • 2 tablespoons honey (runny)
  • 4 tablespoons orange juice
  • 2 oranges (finely grated zest of)
  • 4 ounces butter
  • 8 ounces superfine sugar
  • 3 eggs
  • 2 ounces spelt flour
  • 2 ounces self-raising flour
  • 5 ounces polenta
  • 2 ounces almond meal
  • 3 ounces greek yoghurt (full-fat)
  • 2 tablespoons honey (runny)
  • 4 tablespoons orange juice
  • 2 oranges (finely grated zest of)

Method

  • Preheat oven to gas 4 and grease and line a 9" cake tin.
  • Cream the butter and sugar together then beat in the eggs, one at a time.
  • In a separate bowl, mix the flours together then add them to the creamed mixture.
  • Whisk in the polenta, greek yoghurt, runny honey, almonds, orange juice and orange zest.
  • Pour into the prepared cake tin and bake in the oven for 45 to 60 minutes, until a skewer inserted comes out clean.
