Soph's Fruit Loaf

Introduction

This is a sort of lighter version of Soreen. And it's dead easy because all the ingredients are equal. Crumbly and delicious with a thick, crunchy crust. My mum likes it anyway!

Ingredients

Serves: 6

  • 250 oat bran
  • 250 superfine sugar
  • 250 mixed dried fruit
  • 250 reduced fat milk
  • 250 self-raising flour

Method

  • Mix the oat bran, dried fruit, superfine sugar and milk together in a large bowl. Leave to stand for 1 hour. (After 45 mins, pre-heat your oven to 180 degrees and grease your loaf-tin.)
  • Sieve the self-raising flour into the mixture, mix well and pour in to your tin.
  • Bake for 90 mins (test with a skewer) and leave to cool on a wire rack. Great with sliced bananas! :)
