Black Cake Fruit

Asked by Anita Morris. Answered on 15th December 2012

Full question

Hello, I've soaked the fruit ready to make Black Cake for Christmas. In Domestic Goddess the recipe says to use half the fruit in making the cake. Is that an error or do I do something else with the rest of the fruit? Many thanks, Anita

Our answer

Unfortunately there was a printing error in the earlier copies of Domestic Goddess and for the Black Cake on p250 you should actually use the whole quantity of macerated fruit, not half of the fruit. The soaked fruit keeps very well so if you haven't time to make the cake this year then the soaked fruit will keep in a tightly sealed container in a cool, dry and dark place until next year.

If possible try to buy whole candied peel and chop it yourself, rather than using the finekly diced variety. Last year it was slightly difficult to fine whole candied peel in the UK but there is an on-line source which sells a good selecion of candied peels, please see the link below.
