I am allergic to chocolate/cocoa and want to find a replacement suitable in flavor and texture for the cocoa nibs in the breakfast bars 2.0 recipe. Thank you.

Our answer

Nigella's recipe for Breakfast Bars 2.0 (from SIMPLY NIGELLA) includes goji berries, pumpkin seeds, flaxseeds, chia seeds and cocoa nibs. Cocoa (or cacao) nibs are roughy crushed dried and fermented cocoa beans. They have a crunchy texture and and an intense chocolate flavour, which can be slightly nutty and bitter as the nibs are unsweetened.

It is difficult to replicate the chocolate flavour of the cocoa nibs but for texture and a slightly nutty taste we would suggest replacing the nibs with roughly chopped walnuts or pecan nuts. However the nuts may soften slightly if the bars are stored in an airtight container for more than a couple of days. They will still be fine to eat but you may prefer to freeze the bars if you intend to store them for longer.
