Nigella's Cherry Cheesecake (from NIGELLA EXPRESS) is a no-bake cheesecake that is made with a combination of cream cheese and whipped cream. These types of cheesecake usually freeze quite well, as long as regular, full fat cream cheese is used. Reduced fat (in the US neufchatel) and low fat cream cheeses can tend to weep when they are defrosted.

Freeze the cheesecake in its springform pan and without the cherry topping. Wrap the pan in a double layer of food wrap and a layer of foil and freeze for up to one month. To thaw the cheesecake, unwrap it, cover with a fresh piece of food wrap or an upturned plate and leave overnight in the fridge. Add the cherry topping before serving.
