Can I Make Chocolate Forgotten Cookies?

Hello there, would it be possible to make a chocolate version of the Forgotten Cookies if I add cocoa powder? If so, how much would be needed?

Our answer

Nigella's Forgotten Cookies (from AT MY TABLE are meringue cookies that are left overnight (or "forgotten") in an oven that is preheated and then turned off and left to cool. They are studded with chocolate chips and pistachio nuts.

We suspect that it would be possible to make a chocolate version by adding cocoa powder, as the centre of the cookies should be slightly chewy rather than being completely dried out. We would suggest adding 1 tablespoon of cocoa powder for each egg white, so for this recipe add 2 tablespoons of cocoa powder and sift it first if it is lumpy. As the cocoa powder acts in a similar way to the cornflour (cornstarch) in the recipe, you can omit the cornflour if using cocoa powder and add the cocoa when you would add the cornflour at the beginning of step 2. But we would mention that as we have not tried the cookies with cocoa powder, we are unable to guarantee the results. Also, as with all meringues, the cookies are affected by humidity, so try to make them when you have dry weather and in a kitchen that is not too steamy.
