Asked by LBLBL. Answered on 25th October 2022

Full question

I've been making your Christmas Chocolate Fruit Cake for years and love it but I want to make a square one. What size square cake tin should I use to make your Christmas Chocolate Fruit Cake?

Our answer

Nigella's Chocolate Fruit Cake (from FEAST) is a great alternative for people who don't like the more traditional rich fruit cake and its moist and squidgy texture means that it doesn't need maturing, so is good for last-minute Christmas preparations.

The cake is baked in a 20cm (8-inch) round springform tin. If you want to bake a square cake then you would need to use an 18cm (7-inch) square tin. You should still line the cake tin with a double layer of baking parchment (parchment paper) and if possible wrap the outside of the pan with brown paper, though this is slightly more fiddly for square cakes. The baking time should be similar, but the sharp edges of square cakes means that the corners can burn more easily, so we suggest that you gently and carefully rotate the cake pan by 90 degrees after the first 1 1/4 hours of baking.
