Can I Make The Chocolate Olive Oil Cake Into A Layer Cake?

Our answer

Nigella's Chocolate Olive Oil Cake (from NIGELLISSIMA) can be made gluten free with ground almonds (almond meal or almond flour) or as a more regular sponge cake with wheat flour. If the cake is made with regular plain (all-purpose) flour then it should be robust enough to be able to layer it. The cake is slightly thicker than the layer of a regular sponge cake, so just bear this in mind as a two layer version may be easier to cut and serve than a three layer cake. The cake can tend to bake with a slight peak with plain flour, so you may need to trim the tops level with a serrated knife.

The gluten-free version of the cake is more tricky as the cake is much more delicate and difficult to manouvre into layers. And we would definitely suggest only two layers of cake. Make sure that the cakes are completely cold before you try to stack them and move the cakes around as little as possible. A large cake lifter should help in moving the layers around more securely, but as we have not tried layering the cake ourselves, we are unable to guarantee the results.
