Nigella's Tomato Curry With Coconut Rice (from KITCHEN) has a spicy vegetarian tomato and pea curry that is offset with a creamy rice that is cooked with coconut milk. The coconut rice makes the dish a slightly more special meal, but you could serve the curry with plain boiled or steamed basmati rice.

Alternatively, you could cook the rice and replace the can of coconut milk and the hot water with 1 litre (4 cups) of vegetable stock (broth). If using a bouillon or stock cube or store-bought broth then bear in mind that these usually already contain salt, so we suggest reducing the salt to a pinch or omitting the salt completely and adding a little extra seasoning at the end, if needed. You could also add a pinch of saffron strands to the nigella seeds and spring onions (scallions), in step 1 of the method, to give the rice more of a pilaf feel.
