Can I Use The Instant Pancake Mix To Make Pikelets?

Nigella's Home-Made Instant Pancake Mix (from NIGELLA EXPRESS) is a dry mixture to which you can easily add milk and eggs to make American-style pancakes that are thick and fluffy.

In the UK a pikelet is leavened with yeast, so is more like a skinny crumpet. For this type of pikelet Nigella's recipe is not suitable. However, in Australia and New Zealand a pikelet is a small pancake leavened with baking powder and/or bicarbonate of soda. So for an Antipodean version of pikelets, the Home Made Instant Pancake Mix would be suitable. As pikelets are usually smaller than the pancakes in the recipe, we would suggest using only 1 tablespoon of batter, as mixed according to the instructions, per pancake, and it should make approximately 30 pikelets.
