Hello. I love Nigella's Chicken And Pea Traybake but every time I make this, the peas and leeks burn. Tastes good but looks horrible. I've tried reducing cooking time but then the chicken doesn't cook. Help.

Nigella's Chicken And Pea Traybake (from AT MY TABLE) is perfect for the busy cook as it is an all-in-one dish that requires very little attention while it is in the oven. The peas should braise in the liquid in the bottom of the roasting tin, a combination of vermouth and chicken juices. From the description we suspect that the liquid is evaporating too quickly, causing the vegetables to burn slightly.

You need to use a roasting tin with deep sides, if you are using a baking sheet with a lip then this would be too shallow and the liquid will evaporate too quickly. If you don't have an alternative tin then when you check the tin after the first 45 minutes you may need to add a splash or two of hot water from a freshly boiled kettle. There should still be enough liquid at this stage to just cover the peas.
