How far ahead can I dress the Crunchy Hot & Sour Salad? How long will it keep dressed? Will it get soggy?

Nigella's Crunchy Salad With Hot And Sour Dressing (from NIGELLA EXPRESS) is a combination of partially cooked and raw vegetables, tossed with a sweet, sour and spicy dressing. The beans, broccoli and baby sweetcorn should be tender-crisp, that is very slighty softened but still with some crunch and definitely not soft or mushy.

The cooked vegetables should not change texture too much once the dressing is added. The beansprouts, mushrooms and chinese leaf lettuce (napa cabbage) will soften slightly over time in the dressing, but should retain their crunch for the first 6-12 hours and still be fairly firm for the first day or so. The salad should be stored in the fridge and eaten within 5 days, though it will be at its best within the first 3 days.
