Freezing Moonblush Tomatoes

Having made Moonblush Tomotoes by leaving them overnight in the cooling oven, can you then freeze them?

Our answer

Nigella's Moonblush Tomatoes (from NIGELLA BITES) are semi-dried tomatoes that are made by putting halved cherry tomatoes in a hot oven that is then switched off and left overnight. This concentrates and sweetens the flavour of the tomatoes and can be a good way to use out of season tomatoes.

Whilst it is possible to freeze the tomatoes, unfortunately they tend to be a little mushy when they defrost. This is fine if they are to be cooked into a sauce but the texture is not so great if you want to use them for a salad. So we would only suggest this if you have leftover tomatoes and no immediate use for them. The tomatoes need to be stored in the fridge in an airtight container and will keep for up to 5 days. Try to remove the Moonblush Tomatoes from the fridge about an hour before eating so that they lose some of their chill, as the flavour is better at room temperature.
