I know I can freeze the dough of the sugar cookies, and often do, but If I wanted to get ahead of time how long would the sugar cookies keep once baked please?

Nigella's Butter Cut-Out Cookies (from HOW TO BE A DOMESTIC GODDESS) are a form of sugar cookie. The dough can be rolled out and cut into shapes before the cookies are baked. It is possible to bake the cookies in advance and there are various ways to store them.

The baked cookies can be frozen (without icing) for up to 3 months. Carefully stack the cookies in airtight containers, with pieces of baking parchment (parchment paper) between the layers of cookies before freezing. To thaw the cookies, put them on a wire rack at room temperature for 1-2 hours. The baked but un-iced cookies can be stored in an airtight container in a cool, dry place for up to 3 days before they are decorated. Once the cookies have been iced they will soften more quickly and are at their best within 24 hours, though they should keep for 2-3 days in an airtight container.
