How Long Can I Marinate The Chicken In The Teriyaki Sauce?

For the Chicken Teryaki, is it possible to marinate the chicken in the mixture for a longer period, e.g. overnight, or would this have a negative effect? Thank you.

Our answer

NIgella's Chicken Teriyaki (from KITCHEN) is a speedy stir-fry dish that uses a home-made teriyaki sauce. The sauce contains, sake, mirin, sugar, ginger and soy sauce and is used to marinate the chicken briefly before cooking.

We would not recommend marinating the chicken overnight as the combination of soy sauce and alcohol is good for imparting flavour short term, but if you leave the chicken in the marinade for too long then these ingredients start to act on (denature) the proteins in the chicken and this can make the chicken become dry and tough when it is cooked. You can make up the marinade the night before and store it, covered, in the fridge then drop the chicken pieces into the marinade for 15-30 minutes, maybe while you cook the rice, before cooking.
