Asked by djsyclopz. Answered on 21st October 2017

Full question

Please can you tell me the quantities for Nigella's Jumleberry Crumble if I make it for 6 people and how long should it be cooked for? The frozen fruit comes in packs of 300g. Many thanks.

Our answer

Nigella's Jumbleberry Crumble (from NIGELLA EXPRESS) is a recipe for an individual fruit crumble made with mixed (a "jumble of") berries. If you wanted to make six individual crumbles then you would just use six times the quantities of each ingredient and the baking time would be the same.

However if you wanted to make one large crumble to serve 6 people (in an ovenproof dish with a capacity of approximately 1.5 litres/6 cups) then we would suggest using 600g frozen fruits (for convenience, as it would be 2 x 300g packages), 2 tablespoons of cornflour (cornstarch) and 4 tablespoons of vanilla sugar. Unless you want a very thick crust on the crumble then you will probably not need as much topping so we would suggest making a topping with 3 or 4 times the ingredients listed. For a large crumble we would also suggest reducing the oven to 200c/400F and baking the crumble for 30-40 minutes, until the topping is golden and you can see the juices of the berries bubbling up the sides of the dish. We would also suggest putting the dish on a baking sheet to catch any stray drips of fruit juice. Unfortunately as we have not tested the crumble in this size we are unable to guarantee the results. You may also like to consider Nigella's Strawberry And Almond Crumble as this serves 6 people and would work well with frozen strawberries.
