Full question

The recipe for Lemon Tendercake With Blueberry Compote gives all the liquid ingredients as volume except for the coconut milk which is given as a weight in grams. Is this correct? It seems a little strange to give liquid ingredient measurement this way.

Nigella's Lemon Tendercake With Blueberry Compote (from AT MY TABLE) is a vegan cake made with coconut milk. For the cake you need to try and use the thicker coconut cream that usually settles at the top of a can of coconut milk if you leave it to stand for a day or so.

Sometimes this coconut cream is almost solid, particularly if the can has been in a cold place, and so for the metric measurements it is slightly easier to weigh this thick cream rather than use a volume measurement. If you wish to use a volume measurement then you should use 275mls.
