Where can I find the recipe for the Meat Loaf which Nigella cooked on the BBC programme on 11 November? I have a family who are clamouring for me to make it!

Hi, as we don't like onions can you suggest an alternative ingredient to replace them in this recipe? Thank you

Our answer

The meat loaf recipe can be found in Nigella's new book, Kitchen, p458. The recipe comes from Nigella's good friend (and agent) Ed Victor and is a traditional American recipe that was passed on to Ed by his mother. It is fabulous hot but do try to save some for a cold meatloaf sandwich a day later.

Unfortunately the boiled egg in the meatloaf does not freeze well, but in the very unlikely event that there are extra leftovers then you could always remove the egg and freeze just the meat and bacon part, though it wouldn't be quite the same.

If you don't like onions the you could try shallots, which are a milder, sweeter member of the onion family. Alternatively try using 4 large leeks, trimmed and rinsed, then thinly sliced.
