Full question

I want to make the Mustard Pork Chops but want to avoid the alcohol to make it suitable for all the family. Would apple juice work?

Our answer

Nigella's Mustard Pork Chops (from NIGELLA EXPRESS) are pan fried pork chops that are accompanied by an easy pan sauce. The sauce is made by deglazing the frying pan used for the chops with (hard) cider, then addding mustard and cream. Most of the alcohol from the cider is boiled away when the sauce is made, but it is possible to use an alternative to the cider if you prefer.

We feel that apple juice is a little too sweet for this recipe and will become syrupy as it boils down. Instead we would use chicken or vegetable stock or broth as an alternative, beef stock could be a little too strong. As stock usually contains some salt, try to use a low sodium stock and taste the sauce before adding any seasoning.
