Potatoes For Curry

Can I use normal potatoes instead of sweet potatoes in the Butternut And Sweet Potato Curry? I don't like sweet potatoes.

Our answer

Nigella's Butternut And Sweet Potato Curry (from AT MY TABLE) is a fairly flexible recipe and could be made with other firm vegetables that may be available. Butternut squash has good flavour and texture and matches well with sweet potatoes, however you should be able to use regular potatoes if you like. We would however suggest that you use a waxy type potato (such as new potatoes, charlotte, anya or fingerling potatoes) as floury/starchy potatoes will break up easily once cooked.

Alternatively you could use extra butternut squash or try using carrots. Make sure that the carrots are cut into similar sized chunks to the butternut squash. If you use vegetables such as peas or beans or baby corn cobs then add them just a few minutes before the end of the cooking time, so that they don't overcook.
