Sauce For Girdlebuster Pie

Nigella's Girdlebuster Pie (from NIGELLA CHRISTMAS) has a chocolate and cookie crumb crust that is filled with coffee ice cream and doused with a slightly salty, buttery caramel sauce. It is and easy and indulgent dessert that can be made in advance and stored in the freezer.

The sauce includes two tablespoons of bourbon to add a slightly smoky note and to round out the flavour of the sauce. The bourbon can certainly be omitted for children, though we would suggest adding one teaspoon of vanilla extract instead to give slightly more depth of flavour to the sauce.
