I am really excited to try the Time-Honoured Christmas Cake this year. I have started using a lot of spelt in my baking, do you think it would work here? And can you advise how I could substitute spelt flour for the plain flour suggested?

Nigella's [Time-Honoured Christmas Cake](from [FEAST9/books/feast)) is a traditional rich fruit cake. It is made with regular flour but overall the flour is a small proportion of the ingredients, so we suspect that it would be possible to use spelt flour (dinkel wheat) as an alternative.
Spelt flour comes in white/refined and whole grain forms and for choice we would use the white version for the cake and use the same quantity as for the regular flour. Spelt flour usually requires slightly less liquid in recipes, but as the cake batter is quite thick we do not think that it would be necessary to reduce the liquid for this particular cake. The baking time and oven temperature would be the same. Please note that as we have not tried this recipe with spelt flour, we are unable to guarantee the results.
