Our answer

Nigella's Forgotten Cookies (from AT MY TABLE) are meringue-based cookies that are studded with chopped pistachios and mini chocolate chips. The pistachios are shelled raw pistachios, i.e. they are not roasted or salted. The pistachios will toast slightly in the first few minutes that the cookies are in the oven, so we would avoid using already toasted pistachios.

If the pistachios have a lot of papery skins on them then you may prefer to remove some of the skins first. Bring a saucepan of water to the boil then remove from the heat, add the pistachios and let them stand for 2-3 minutes. Carefully drain the pistachios then put them in a tea towel and rub gently to remove as much of the skin as possible. Pick out the nuts and leave them on paper towels to dry completely before using them.
