I am curious as to why the Chorizo And Chickpea Stew recipe doesn't add onion when frying the chorizo? I think I may try it and add an onion. Many thanks

Nigella's Chorizo And Chickpea Stew (from KITCHEN) is a speedy supper dish made from mostly storecupboard ingredients. The stew itself can be made in the time that the bulgur wheat cooks.

The stew does not include an onion as the chorizo provides plenty of flavour on its own. Also, if you add an onion, even a very finely chopped one, it would increase the cooking time and make the dish less "express". If you prefer to add a small onion then that is possible but you may need to add a splash of olive oil to the pan and allow an extra 5-10 minutes cooking time for the onion to soften. You could also try using thinly sliced spring onions (scallions) instead, as these will soften much more quickly than a regular yellow or white onion.
