Nigella's Slow Roasted Garlic And Lemon Chicken (from FOREVER SUMMER is cooked in a covered roasting dish in a low oven for 2 hours. The result is meltingly tender chicken alongside soft and mellow garlic cloves and lemon chunks. The wine turns to steam while the chicken cooks and most of the alcohol evaporates. The steamy environment helps to keep the chicken moist and the traces of wine left add flavour to the juices of the chicken and lemons.

If you do not wish to use wine then chicken or vegetable stock can be substituted instead. If possible use a low salt version as the stock will mostly evaporate throughout the cooking time and this will avoid the remaining concentrated juces from becoming too salty. You could also use plain water as an alternative.
