Hello, Im going to cook Nigella's Chicken Schnitzel with Bacon & White Wine, but which white wine should I use? Thank you.

Nigella's version of chicken schnitzel, from Nigella Express, are speedy pan-fried chicken escalopes with a bacon and white wine sauce. It is a "naturschnitzel", so the chicken is not coated in breadcrumbs before frying.
Generally for savoury cooking you would want to use a dry white wine with a reasonable amount of body. However it is best, and usually most economical, to use a glass of whatever white wine you prefer to drink, particularly as the recipe uses only 100ml (scant 1/2 cup) of wine.
As the dish is associated with Vienna, it may be nice to use a wine from that region and one of the the most popular white grapes for dry white Austrian wines is the Gruner Veltliner. If you prefer a slightly more aromatic wine then a Riesling would also be an option.
