  • Clementine Cake

    The recipe for Nigella's Clementine Cake calls for almond flour. My husband is allergic to nuts, what would be the best flour alternative? Thank you, Kathy Olson 

    From the nigella team:

    Nigella's Clementine Cake (from How To Eat) is a flourless cake made with clementines that have been cooked until soft and also almond meal (almond flour/ground almonds). Unfortunately if your husband has a nut allergy then we would not recommend substituting the nuts with another type of flour as the nuts are very important to the finished cake. The cake has a very moist and crumbly texture thanks to the oil in the nuts and the lack of gluten. Using flour would mean adjusting the recipe quite significantly and this is not something we have tested.

    If you are looking for an orange-flavoured cake then we would suggest trying Nigella's Lemon-Syrup Loaf Cake (from Domestic Goddess) and using oranges instead of lemons (or half oranges and half lemons for a slightly sharper flavour). As oranges are largere than lemons you will need to adjust slighty the amount of juice used for the syrup, and we would suggest using 6 tablespoons of orange juice instead of the juice of 1 1/2 lemons. The cake is flavoured with the orange zest and if you have time rub the orange zest with the sugar before creaming it with the butter - this helps to release the flavourful oils from the zest.
