  • Crunchie Bars Substitution

    I live in the US, and saw Nigella's Sweet And Salty Crunch Nut Bars. I have never seen a honeycomb bar here and was wondering if a Butterfinger bar would work instead? Thank you for your time

    From the nigella team:

    In the US there is not a branded honeycomb candy bar though honeycomb candy is available in some cany stores and on-line and may also be known as hokey pokey, sea foam, sponge candy, angel food candy or fairy food candy, depending on which part of the States you are in.

    The candy has an open, spongy texture and will break into smaller nuggets if broken up. Unfortunately the texture of a Butterfinger bar is different as it is denser and flakes very easily, so is more difficult to break into the crunchy chunks for the bars. However, you could use this as a substitute if you really want to.

    Honeycomb candy is fairly easy to make at home and Nigella has a recipe for Hokey Pokey in Nigella Express and on this website (link below). If you can't find golden syrup then you could use light corn syrup. When making the candy be sure to cook the sugar mixture for long enough as the time can vary according to the size of pan used. The mixture should reach "hard crack" stage, which is 150-154c/300-310F if you have a candy thermometer, or if you drop a little of the mixture into a glass of cold water it will form a thread which snaps easily between the fingers. If you don't cook it enough then the candy will be chewy rather than crisp.
