Can mushrooms be added to this recipe and when would be the right time exactly? And other toppings like tuna and bell peppers, can they be added at the final 2 - 3 minutes? Thanks.

You can substitute the chorizo topping on the crustless pizza with other toppings but as they are only in the oven for 2 to 3 minutes they do need to be ingredients which just need warming through and not ones that need thorough cooking. If you are using vegetables like onions, bell peppers or mushrooms then we would suggest that they are pre cooked first - thinly slice them and fry in a little oil until soft.
You can use tuna as a topping but make sure that it is very well drained as otherwise it could make the base a little soggy. Other ingredients like thinly sliced ham are also good. Also try not to overload the pizza with too many toppings as again they make make the base loose some of its crispness.
