  • Golden Syrup

    Dear Nigella Team, Please explain what Golden Syrup is (ingredients that make up the syrup). Also, is it sold in the states or is there mail order information that you can share. Thank you. Diane Henry 

    From the nigella team:

    Golden syrup is a thick sugar syrup which is made as a by product of the sugar refining process. As it is an inverted sugar syrup which means that it tends to attract water so it will tend not to crystallize and when it is added to baked goods such as cookies they will tend to me more moist than those made with just sugar.

    Golden syrup is more viscous than corn syrup and is made from sugar cane. In many cases light corn syrup can be used instead of golden syrup when the quantities used are quite small. However we would not recommend using corn syrup instead of golden syrup in a treacle tart recipe as the flavour and consistency is likely to be different.

    Lyle's is the main manufacturer of golden syrup and as far as we are aware it has become more widely available in the US in the last few years. You may find it in the baking aisle your main supermarket or grocery store or in a gourmet store.

    On-line the syrup can often be found on Amazon or you could try one of the on-line retailers that specialize in British Foods, such as the one on the link below.
