Nigella's Spanish Chicken With Chorizo And Potatoes (from Kitchen and on the Nigella website) is a stress-free traybake recipe where the ingredients are all cooked together on a baking sheet in the oven. The chicken, chorizo sausage, onions and potatoes are scented with oregano and orange zest.

Oregano is commonly used in Mediterranean cooking and has an aromatic, slightly bitter taste. Dried oregano is fairly popular and can be found in the herb and spice section of most supermarkets. Marjoram is from the same family and would be a good substitute. Otherwise thyme is probably the closest alternative that is easily available, though its flavour is slightly more lemony than oregano. Fresh thyme is also fairly easy to find in supermarkets and could be used instead, though you may want to increase the quantity to 3 teaspoons of fresh leaves.
