Hi! I love making Nigella's Hokey Pokey and i was just wondering if you can make hokey pokey in different colours, to use as decoration on cupcakes. Thank you, Carl

It would be possible to colour the Hokey Pokey mixture with food colour but you would need to do this once the syrup and sugar mixture has been cooked to the correct level, and before the bicarboante of soda (baking soda) is added.
It can be difficult to judge the amount of coloring needed and the colour will be affected by the amber colour of the syrup. Colours such as red and orange are likely to be more successful than greens and blues, which could turn a slightly sludgy colour or require large quantities of colour added.
