  • Instant Chocolate Mousse

    Please can you tell me how long I need to leave the melted chocolate mixture to cool before adding the whipped cream when making the Instant Chocolate Mousse from Nigella Express? Thank you.

    From the nigella team:

    As you are incorporating whipped cream into a melted mixture you want to be sure that the melted chocolate mixture is cool enough so that it will not melt the whipped cream. As the cooling time can vary, depending on how hot the mixture is and the warmth of your kitchen, we would suggest that you use a low heat and take the saucepan off the heat as soon as eveything has melted. Let the mixture cool while you whip the cream then very carefully check the temperature of the chocolate by scooping up a little on a spoon - it should only just feel warm.

    When you add the cream it can also help to fold about a quarter of the whipped cream into the chocolate mixture first, this will help to cool the mixture slightly more and then fold in the remaining cream until you have a smooth mouse.
