Hi Team Nigella, I need to make a cheese and vegetable spaghetti dish (suitable for vegetarians). Can you please suggest some recipes?

Nigella has several vegetarian pasta suggestions in Nigella Express. Pappardelle With Escarole (p288) is a slightly unusual dish using escarole lettuce, but you could replace this with spinach or something like savoy cabbage if escarole isn't available. Festive Fusilli (p326) is a mixture of sunblush tomatoes and mascarpone cheese. You can replace the vodka with some vegetable stock if you can't cook with alcohol. If sunblush tomatoes aren't available then you can make your own using Nigella's Moonblush Tomatoes recipe (link below). Linguine with Lemon, Garlic and Thyme Mushrooms (p291) is another option.
In Nigella's book Kitchen we would suggest Curly Pasta with Feta, Spinach and Pine Nuts (p209), Pasta Alla Genovese (p41) and Pappardelle with Butternut and Blue Cheese (p334).
We would mention that Parmesan cheese is not vegetarian, though there are vegetarian alternatives available which could be used instead. Not all blue cheeses are vegetarian so you may need to check the packaging first.
