  • Steamed Syrup Sponge

    Hi! I have acquired the American 'How to be a Domestic Goddess" and note the syrup is different (my Australian copy lent and lost) to my original version. I recall golden syrup (and not corn syrup) but can't remember the quantity of golden syrup to lemon juice. Can you please advise me as to the correct amounts. Thanks, Carol

    From the nigella team:

    Nigella's Steamed Syrup Sponge (from Domestic Goddess) uses golden syrup and lemon juice in the recipe. The syrup and lemon jukce are put in the base of the pudding basin before adding the sponge batter, and forms a sticky sauce when the pudding is turned out.

    In the US version of Domestic Goddess light corn syrup was used instead of golden syrup as this was the closest local alternative ingredient. Since the book was published it has become much easier to find Lyle's golden syrup in US supermarkets.

    If you would like to use golden syrup then you should use 250g of syrup and the juice of 1/2 lemon. If you need to measure the golden syrup by volume then it is 200ml, or 3/4 cup plus 1 tablespoon.
