Using Leftover Christmas Pudding

Hello! I caught the tail-end of a Nigella cooking programme on TV a few days before Christmas, showing how to turn left-over Christmas pudding into chocolate Christmas pudding truffles. I've tried to find the recipe on this website without success. Please would you help me find the recipe? Please could you also let me know if this recipe can be made with Christmas pudding that has been cooked and is left over Christmas pudding from Christmas day (stored in the fridge) still good enough to use? The truffles made by Nigella using left over Christmas pudding are called Christmas Puddini Bonbons and appear in Nigella's book Christmas (p247). The bonbons are made with leftover Christmas pudding (i.e. one that has had its second steaming).

Left over Christmas pudding will usually keep for up to 2 weeks if kept refrigerated. Unfortunately this means it is probably slightly late to make the bonbons this year but they can also be made with Christmas cake so if you have a lot of cake left you could consider making the bonbons with this instead - though the bonbons should be stored in a cool place and eaten within 2 weeks.

Leftover Christmas pudding can be frozen for up to 3 months. It is easiest to cut the pudding into individual portions and wrap each piece tightly in clingfilm, then put the slices in a resealable bag before freezing. The slices can then be defrosted overnight in the fridge and heated in a microwave or fried in a little butter. You can also reheat the slices direct from frozen in a microwave - unwrap them first and it usually takes 1-2 minutes for a single slice, depending on the power of your microwave.

Whenever you reheat Christmas pudding make sure the pudding is piping hot all the way through and don't reheat leftover Christmas pudding more than once.
