Cupcakes Sticking to Cases

My cupcakes always seem cemented to their paper cases which does take some of the enjoyment out of eating them. Is there anything that can be done to stop the cupcake batter sticking to the paper cases and allow the case to be taken off cleanly?

Our answer

If you are finding that the edges of the cupcake are breaking off when you take the paper off it could be due to the cupcake cases being slightly over-filled. If there is too much batter in the case then it will rise up and over the edges of the case as the cupcake bakes and the edge of the case can become trapped in the edge of the cupcake, making it more difficult to remove the paper. Cupcake cases should be filled between half and two-thirds full of batter.

If the base of the cupcakes are sticking to the paper then you could try spraying the inside of the cupcake cases with some non-stick baking spray. In the US there are various brands of spray available in supermarkets. In the UK you can buy various non-stick baking sprays (cake release) on-line and in some larger supermarkets.

In the UK Lakeland also sell cupcake cases made from silicone baking parchment (parchment paper) which should release more easily than regular cupcake cases.
