Frozen Berries in Trifle

Asked by Supanee1980. Answered on 21st December 2014

Full question

Hi Nigella Team! Can I use frozen blackberries in the Anglo-Italian Trifle? Thanks, Penny.

Our answer

Trifle is often seen as a traditional Christmas dish in the UK, especially on Boxing Day and Nigella has several trifle recipes, including the Proper English Trifle (from How To Eat), Boozy British Trifle (from Christmas) and the Anglo-Italian Trifle (from Nigella Summer). They all use summer fruits and out of season it is possible to use frozen berries instead.

For the Anglo-Italian Trifle the blackberries are warmed in a saucepan with the jam and lemon juice and you could use the berries direct from frozen. Just cook them for a couple of minutes longer until the fruit starts to soften slightly and release its juices. For the other trifles we suggest that you thaw the berries for a couple of hours at room temperature before using them.
