  • Granola Bars

    I love Andy's Fairfield Granola (Nigella Feasts, p199) and was wondering if these could be made into a bar so I can pack it into the kid's lunch boxes.. Thanks so much.

    From the nigella team:

    Unfortunately it is not possible to make an exact replica of the granola in bar form as you would need to increase the amounts of sugar, fat and syrup in the mixture to make it hold together in bar form and this will alter the sweetness and flavour of the granola itself. You could make a type of fruit and nut flapjack by weighing together the dry ingredients then adding 3/4 of the weight in melted butter, 1/2 the weight in brown sugar and 1/4 of the weight in syrup. Press into a tin approximately 23x23cm (9x9 inches) and bake at 190c/375F for around 25 minutes. 

    As the recipe originated from the US could we also suggest considering using the granola as "trail mix". In the US trail mix originated as a high energy snack taken in a small bag on a hike or bicycle ride. The most famous type is "GORP", or good old raisins and peanuts, which also usually contains some type of candy coated chocolates such as M&M's or Smarties. For the granola you could  decant small portions into a resealable container or small plastic bag, adding some chocoate chips or candy coated chocolates if you like.

    We would also like to mention that the granola contains almonds and unfortunately most schools either ban or strongly discourage any foods with nuts in due to the risk of children with allergies coming into contact with the nuts. So you may need to exclude the almonds for a school lunchbox bar or trail mix. You could however add some pumpkin seeds and extra sunflower seeds and raisins instead.
