I can't seem to find instant polenta or dried in any of my local supermarkets. (I live in North Dorset). I can only find the ready made polenta, and some of Nigella's recipe require the instant. Is there an alternative or could someone tell me where I can buy it? Thanks Debbie

Instant polenta is cornmeal which has been steamed and dried, making it cook much more quickly than regular polenta. It is sold by many UK supermarkets, try looking for the Merchant Gourmet one minute polenta. This is offered by Sainsbury's and Ocado on their home delivery websites, though availability may vary by region. You could also try gourmet food stores or Italian delicatessens if there are any in your area.
