Watermelon Salad

In the summer a watermelon salad can be a very refreshing combination of sweet and savoury. Nigella has a salad made from watermelon, feta and black olives which appears on p67 of Forever Summer, and there is also a link to the recipe below. Feta is usually made from ewe's milk, rather than goat's milk, but you could use a firm goat's cheese if you prefer.

Watermelons can be very large and if you have some left over then we would suggest trying the salad of watermelon and pomegranate seeds which appears on p446 of How to Eat.
