Yellow Spaghetti Substitute for Marsala

Full question

I'd like to make Nigella's Yellow Spaghetti. However, I'm looking for a substitute for the Marsala. I have found lots of results online that suggest substitutes but they are usually other types of alcohol. I have an intolerance to alcohol and have found that I can't even cook with it without having a bad reaction. I know the dish won't be the same without the Marsala, but is there anything at all that I can use instead that will still leave the dish tasting delicious? Thanks!

Nigella's Yellow Spaghetti (from Nigellissima and on the Nigella website) has a sauce that is similar to a carbonara but is enriched with saffron and marsala. the marsala adds some flavour but is also important as the saffron threads are added to the warmed wine. This lets the saffron "bloom", infusing the wine with flavour and a bright yellow colour.

If you can't use alcohol then we would suggest using vegetable or chicken stock instead. If you are using a powder or cube then you may like to make it a tiny bit stronger than the normal dilution, but not so strong that it overpowers the rest of the sauce.
