Ingredients

Metric Cups
  • 4 chicken pieces (boneless)
  • 4 medium onions
  • 500 millilitres olive oil
  • 4 tablespoons sumac
  • salt
  • pepper
  • flatbread

Method

  • First of all, season then fry the chicken in 2 tbsp of olive oil untill goilden brown ( do that in patches) then set aside.
  • Chop the onions very finely and cook in the olive oil (use all of it as stated above)and the summaq for about 10 minutes.
  • Add the chicken to the onions, cover and cook untill the chicken is thoroughly cooked.
  • Cut the bread into pieces ( one piece for every chicken portion) and arrange it in a larg baking tray.
  • Top the bread with the chicken and some of the summaq onions mixture.
  • Put it in the oven under the grill untill the bread is slightly crispy.
  • Serve with yoghurt and mint salad.
