Ingredients

Serves: 6 - 8

Metric Cups

For the Bobotie

  • 2 onions (sliced)
  • 30 millilitres oil
  • 1 kilogram minced beef
  • 2 slices white bread (or brown bread)
  • 250 millilitres milk
  • 15 millilitres curry powder
  • 15 millilitres sugar
  • 10 millilitres salt
  • 2 millilitres black pepper
  • 5 millilitres turmeric
  • 25 millilitres vinegar
  • 125 millilitres raisins
  • 45 millilitres chutney (mild)
  • 2 eggs
  • 4 bay leaves

For the Rice

  • 500 millilitres rice
  • 2 litres water
  • 10 millilitres salt
  • 10 millilitres turmeric
  • 1 stick cinnamon
  • 150 millilitres raisins
  • 60 millilitres butter
  • 60 millilitres golden syrup

For the Bobotie

  • 2 onions (sliced)
  • 1 fluid ounce oil
  • 2⅕ pounds ground beef
  • 2 slices white bread (or brown bread)
  • 9 fluid ounces milk
  • 1 fluid ounce curry powder
  • 1 fluid ounce sugar
  • fluid ounce salt
  • fluid ounce black pepper
  • fluid ounce turmeric
  • 1 fluid ounce vinegar
  • 4 fluid ounces raisins
  • 2 fluid ounces chutney (mild)
  • 2 eggs
  • 4 bay leaves

For the Rice

  • 18 fluid ounces rice
  • 3½ pints water
  • fluid ounce salt
  • fluid ounce turmeric
  • 1 stick cinnamon
  • 5 fluid ounces raisins
  • 2 fluid ounces butter
  • 2 fluid ounces golden syrup or light corn syrup

Method

  • Soak bread in the milk.
  • Fry the onions in oil until golden but not browned (caramelised). Add beef mince and saute until browned.
  • Squeeze out bread and crumble into mince mixture. Add remaining ingredients BUT NOT MILK AND EGG. Place in greased ovenproof dish.
  • At this point you can make the day before and refrigerate until next day. Press bay leaves into mixture.
  • Whisk egg and milk together and pour over mince.
  • Bake at 180 C for 45 minutes or until top is golden and set. Serve with yellow rice and raisins.
  • SWEET YELLOW RICE AND RAISINS

  • Place rice, water, cinnamon, turmeric and salt in pot and boil until soft.
  • Place in a colander and rinse under cold water.
  • Add raisins and steam in colander over water until raisins are plump.
  • Place rice into serving dish; remove cinnamon stick.
  • Add golden syrup and butter and mix in with 2 forks.
